Zucchini Fritters
Cook time: 25 minutes
Servings: 6 fritters

  • Two grated Zucchini
  • 2 tbsp Coconut Flour
  • 1 Egg
  • Four sliced scallions
  • One tsp Cayenne pepper
  • One tsp Black pepper
  • 2 tbsp Coconut oil
  • One tsp Sea salt

How to cook
  • Stir sea salt and shredded zucchini together in a medium mixing bowl. Set the mixture aside for around 10 minutes.
  • After that, squeeze the water out from the zucchini. Transfer the water to a clean small-sized bowl.
  • Stir egg, pepper, cayenne, scallions and coconut flour together. After that, add coconut oil to a medium-sized container over the heat with medium-high.
  • When the coconut oil has melted, you have to form six fritters. Put them in the bowl. Brown their each side and then set them aside.
